Ingredients for 1 servings:
- 150 g walnuts
- 260 g wheat flour, 405
- 260 g wheat flour, 550
- 500 g water
- 1 cube of yeast
- 3 tsp honey
- 3 tsp salt
- some butter or margarine
- some flour
Instructions
Working time approx. 35 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 5 minutes
Combine both types of flour in a large bowl and mix. Make a generous well in the center and add the crumbled yeast, honey, crushed walnuts, and water. Knead lightly to form a pre-dough and let it rise for 30 minutes (with the oven light on). Add salt to the dough, stir well again with a wooden spoon (5 minutes), and let it rise for another 30 minutes. Mix the dough again and pour it into a 32cm loaf pan lined with butter and flour. Let it rest for 30 minutes. Preheat the oven to 250°C (480°F) and pre-bake the dough for 10 minutes using conventional heat, then reduce the temperature to 190°C (375°F) and finish baking using fan-assisted heat for 50 minutes.
