Walnut cream à la Gabi

Ingredients for 4 servings:

  • ½ bunch chives, chopped
  • 60 g walnut kernels
  • 2 tbsp white wine vinegar
  • 2 tbsp cloudy apple juice
  • 1 tbsp mustard, sweet
  • Madras curry powder
  • Sea salt and black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk the chives, walnuts, vinegar, apple juice, mustard and curry with a hand blender until you get a not too fine cream and season with salt and pepper.
