Walnut spaetzle

Ingredients for 4 servings:

  • 250 g flour
  • 3 m.-sized eggs
  • Salt
  • nutmeg
  • 4 tbsp mineral water
  • 3 tbsp walnut oil
  • 40 g walnuts, finely chopped

Instructions

Working time approx. 45 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 1 hour 6 minutes

as a side dish

Put the flour in a bowl and make a well in the pan. Add the eggs, salt, nutmeg, and mineral water. Quickly mix all the ingredients together and beat with a wooden spoon until the dough bubbles. Let the dough rest for 15 minutes. Bring a large amount of salted water to a boil in a wide, tall pot. Press the spaetzle dough in portions through a spaetzle press. As soon as the spaetzle rise to the surface, remove them with a slotted spoon, refresh themselves, and let them drain. Heat the walnut oil in a wide pan. Add the spaetzle and heat until hot, season with salt and nutmeg, and mix in half of the walnuts. Garnish with the remaining walnuts before serving.
