- 150 g Watermelon fresh without the peel
- 50 g Sheep cheese
- 2 tablespoon Freshly squeezed lime juice
- 4 Mint leaves
- 1 teaspoon Summer blossom honey
- 1 tablespoon Olive oil
- Ground pepper white
- Remove the seeds from the watermelon and cut the pulp into cubes. Drain the sheep’s cheese, also cut into cubes.
- Squeeze the lime. Wash the mint leaves, shake dry and cut finely. Mix the lime juice with the mint and honey. Beat in the olive oil. Season to taste with pepper.
- Gently mix the melon with the sheep’s cheese and dressing. Let it steep for 10 minutes. Serve and garnish with mint.
