Ingredients for 4 servings:
- 1.2 kg watermelon(s)
- 1 lemon(s)
- ½ bunch mint
- 4 tbsp olive oil
- 500 g feta cheese
- Pepper from the mill
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the melon crosswise and scoop out the flesh with a spoon. Remove the seeds and dice the flesh. Don’t discard the melon rind. Combine the olive oil, lemon juice, and pepper, and toss with the melon cubes. Wash and roughly chop the mint, dice the feta cheese, and toss everything with the melon cubes. Serve the finished salad in the melon rinds.
