Weinviertel egg spread

Ingredients for 4 servings:

  • 2 eggs, hard-boiled
  • 1 small green bell pepper(s)
  • ½ bunch parsley
  • ½ bunch chives
  • 100 g cooked ham
  • 1 small gherkin(s)
  • 1 tsp pepper, pickled green
  • 2 tbsp crème fraîche or sour cream
  • Salt

Spread from Lower Austria, also suitable for WW

Finely chop the eggs, bell pepper (cleaned, of course), parsley, ham, and gherkin. Finely chop the chives, drain the peppercorns, and roughly chop them. Mix all the chopped ingredients together well in a bowl. Stir in the crème fraîche and season the egg spread with salt to taste. Goes very well with wholemeal or farmhouse bread. If you use 30g of sour cream instead of the crème fraîche, you’ll need 2 portions per serving.
