Ingredients for 1 servings:

  • 3 eggs
  • 1 tbsp curry powder (preferably an Arabic mix)
  • e.g. milk
  • 1 tsp instant broth (I use vegetable broth powder)
  • Salt
  • 4 cherry tomatoes
  • 1 small onion(s)
  • 1 tsp sugar
  • Sunflower oil

Working time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 17 minutes

Finely chop the onion and tomatoes, heat oil in a pan, and sauté the onion and tomatoes, covered. In a bowl, whisk the eggs with the curry, salt, milk (depending on your appetite), and bouillon powder. You can experiment with the amount of curry and other spices. Add sugar to the tomatoes and stir, making sure nothing burns. Once the tomatoes are cooked, add the eggs and stir until set.
