Ingredients for 6 servings:

  • 500 g potatoes
  • ½ head of iceberg lettuce
  • 1 cucumber(s)
  • 2 apples, sour
  • 2 onions
  • 1 can of corn
  • 2 tbsp cloudy apple juice
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp sugar
  • 5 tbsp oil
  • 3 tbsp vinegar, e.g. herb vinegar, or wine vinegar
  • possibly herbs, e.g. parsley or dill

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 50 minutes

Delicious potato salad with fresh lettuce

Wash the potatoes and cook, covered with water, for 25-30 minutes. Drain and peel while still warm. Slice the potatoes and place them in a large bowl. Chop the iceberg lettuce and cucumber. Peel, quarter, and slice the apples. Peel and chop the onion. Drain the corn kernels. Add all ingredients to the potatoes. Mix the vinegar with the lemon juice, apple juice, mustard, salt, pepper, and sugar. Stir in the oil. Pour the dressing over the salad ingredients and mix well. Let stand for 2-3 hours, then season to taste and adjust the seasoning if necessary.
