Bison meat is considered to be the type of meat with the lowest fat and cholesterol levels. Unlike beef, which only gets its special taste from its fat marbling, bison meat has an intense taste of its own. It is eaten in different forms. This includes sausages such as bison salami and bison ham, but also meat dishes such as roast beef, steak or filet.
The lean bison meat has a 30 percent lower water content than beef. For this reason, it may only be prepared with short cooking times and with a gentle supply of heat. Otherwise, it will dry out quickly.
