Ingredients for 1 servings:
- 400 g wheat flour, type 405
- 400 g rye flour, type 1150
- 1 cube of yeast
- 300 ml wheat beer, dark
- 200 ml water, lukewarm
- 1 tbsp salt
- 1 tsp honey, liquid
- 1 tsp sugar
- 1 tsp bread spice mix, as desired

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 2 hours 25 minutes
Spicy bread – super delicious for a snack
In a mixing bowl, combine both types of flour, salt, honey, and sugar, along with any bread spice mix you may have. Dissolve the yeast in the lukewarm water and add it to the flour along with the beer. Knead for at least 5 minutes until you have a smooth dough, either by hand or using the dough hook on a mixer. Cover the dough and let it rise in a warm place for about 30 minutes, until it has almost doubled in size. Knead again and form a loaf, place it on a baking sheet, and let it rise for another 30 minutes. Alternatively, transfer the dough to a proving basket and let it rise. If desired, score the bread with a serrated knife before baking. In the meantime, preheat the oven to 220°C (top/bottom heat) and place a bowl of water in the bottom. Bake the bread on the second-to-last rack. For 10-15 minutes at 220°C, then reduce the temperature to 180°C and bake for another 50 minutes.
