Whey and baking soda rolls

Ingredients for 1 servings:

  • 260 g wheat flour (type 550) or light spelt flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 200 ml whey or buttermilk
  • Water for brushing

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 19 minutes; Total time approx. 24 minutes

quick and without rising time, makes 6 pieces.

Mix flour, salt, and baking soda in a bowl, then add the whey and knead into a soft, non-sticky dough. If necessary, add a little more flour. Immediately form 6 rolls and place them on a baking sheet or rack lined with baking paper. Score the rolls lengthwise with a knife or the edge of a spatula and brush them thinly with water. Place the tray or rack in an oven preheated to 190°C (fan-assisted) with a cup of water on the bottom and bake for about 17 minutes. Then turn off the oven and let the rolls rest for about 2 minutes. The rolls are delicious warm, and even the next day!
