White Beans with Bacon and Cabanossi from the Crock Pot

Ingredients for 4 servings:

  • 2 cans of white beans, 800 g each
  • 250 g smoked bacon
  • 2 Landjäger or Cabanossi
  • 4 large spring onions or 1 leek
  • 750 ml meat broth
  • 2 tbsp tomato paste
  • 2 tbsp ketchup (hot ketchup / chili ketchup)
  • salt and pepper
  • 1 dashes Tabasco
  • Herbs of Provence
  • marjoram
  • garlic powder
  • 1 tbsp cornstarch, mixed

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes

a classic, simply quick and tasty

A classic adapted for the CP – quick, easy and incredibly delicious. Drain and rinse the beans. Slice the leek into rings. Cut the bacon into strips. If there is any rind, remove it whole, but you can cook it with the bacon for flavor. Halve the Landjäger or Cabanossi sausages lengthwise and cut into cubes. Add everything to the CP and top up with stock. Add tomato paste, ketchup and seasoning and mix well. Simmer on high for about 2 hours. At the end, thicken to taste with mixed flour or cornstarch and simmer for about another 10 minutes, stirring frequently. Serve with pastries or dumplings. I use a 6.5 L Andrew James Crock Pot.
