Ingredients for 1 servings:

  • 500 g flour
  • 375 g lard, pure
  • 250 g sugar
  • 1 tsp, stripped ammonium bicarbonate
  • 2 tbsp cocoa powder (only for brown butter nuts)

Melt the lard (important: do not boil, otherwise the baking powder will foam). Add the flour, sugar, and baking powder (less if you use baking powder from the pharmacy; it has a stronger leavening power because it is much fresher), and perhaps some cocoa powder, and mix. Let the mixture set. Form small balls, place them on a baking sheet (preferably lined with baking paper), and press down lightly. Bake at 180°C for 10-12 minutes. The nuts are ready when the surface cracks open noticeably. Let them cool first, then remove them from the baking sheet! Butternuts should be handled carefully!
