White sausage salad

Ingredients for 4 servings:

  • 4 sausages (white sausages)
  • 1 small jar of onion(s) (shell onions)
  • 3 tbsp mustard, sweet
  • 150 g radishes
  • 150 g lamb’s lettuce
  • 150 g gherkins
  • 1 small vegetable onion(s)
  • ½ bunch parsley
  • 75 ml vinegar (white wine -)
  • 3 tbsp oil
  • 1 pinch(s) of sugar
  • Salt and pepper, from the mill

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Add the white sausage to boiling water and let it simmer for 5 minutes (remove the pot from the heat). Drain the pearl onions. Mix together the mustard, vinegar, salt, pepper, and sugar, then whisk in the oil. Wash and trim the radishes and cut into sticks. Let the sausage cool slightly. Trim the lamb’s lettuce, wash it thoroughly, and let it drain. Finely dice the cucumber, peel the onion, and slice it into thin rings. Remove the skin from the sausage. Slice the sausage. Mix the sausage, radishes, lamb’s lettuce, pearl onions, and onion rings, pour the vinaigrette over it, and let it simmer for about 1 hour. Finely chop the parsley and sprinkle it over the white sausage salad.
