Ingredients for 1 servings:
- 330 ml milk, 1.5% fat
- ½ cube of fresh yeast or 1 1/4 packet of dry yeast
- 50 g low-fat margarine
- 1 tsp sugar
- 330 g wholemeal spelt flour
- 330 g spelt flour
- 2 tsp salt
- 2 eggs
- 2 tbsp sugar
- 1 egg white for brushing
- Seeds, e.g. poppy, sesame, sunflower seeds

First, heat the milk and dissolve the margarine in it. Dissolve the yeast and 1 teaspoon of sugar in it. This creates a pre-dough from the ingredients. Put the flour in a mixing bowl and make a well in the middle. Pour the pre-dough into the well in the flour and let it rise for 3 minutes. Add salt and eggs and knead for 3-5 minutes until you have a loose dough. This works best in a food processor. If the dough is too runny, add a little more flour. Cover the yeast dough and let it rise in a warm oven (approx. 30 degrees Celsius) or on the radiator until it has doubled in size. Form the dough into 12 equal-sized balls on a floured surface. Use the handle of a wooden spoon to make a hole in each ball. Then, using the wooden spoon or your fingers, roll the ball around on a floured surface until it has the typical bagel shape. Bring 2 liters of water and 2 tablespoons of sugar to a boil in a saucepan. Now reduce the water temperature slightly. Now add 2-3 bagels at a time (depending on the size of the pot) to the pot and let them soak in the hot water for 3 minutes. Turn the bagels over halfway through. The bagels will already have reached their desired size by boiling in the water. They won’t expand in the oven. Preheat the oven to 200 degrees (top/bottom heat). Brush the bagels with egg white and sprinkle them on top (and bottom) with your desired seeds. I used poppy seeds, sesame seeds, and sunflower seeds. You could also use cheese and pumpkin seeds. Then bake the bagels for 20-25 minutes. They freeze well when cold. To thaw, I put them briefly in the microwave on low power and then toast them.
