Whole-grain spelt banana muffins

Ingredients for 1 servings:

  • 120 g spelt flour
  • 80 g wholemeal flour
  • 80 g cane sugar
  • 1 packet of Bourbon vanilla sugar
  • 2 tbsp, heaped cocoa powder
  • 1 tsp, smothered cinnamon
  • tsp, saturates baking soda
  • 2 tsp, leveled baking powder
  • 1 egg(s)
  • 90 ml milk
  • 30 g sour cream
  • 30 ml maple syrup
  • 115 g butter
  • 3 banana(s), ripe

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

makes about 12 pieces

Set the oven to 160°C fan-assisted or 180°C top/bottom heat. Combine the flour, sugar, vanilla sugar, cocoa powder, cinnamon, baking soda, and baking powder. Add the egg, milk, cream, maple syrup, butter, and bananas and mix well. Pour the batter into muffin cups or onto a baking sheet and bake for 25-30 minutes. Let cool.
