Pasta with green asparagus and blue cheese

Ingredients for 2 servings:

  • 200g tagliatelle
  • 150 g asparagus, green
  • 40 g blue cheese
  • ½ cup soy cream (Soy Cream Cuisine) or cream
  • 10 g walnuts
  • 3 tbsp sunflower oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook the tagliatelle in salted water until al dente, as directed on the package. Wash the asparagus. Peel the bottom third of the asparagus. Trim the asparagus heads and set aside. Cut the asparagus stalks into 1/2 cm pieces. Crumble the walnuts. Heat the oil in a pan, add the asparagus pieces, and fry until crispy. Add the walnuts, cover, and continue frying for about 4-5 minutes. Add the cheese and soy cuisine or cream, and reduce the heat to low. Simmer gently until the cheese has melted and the sauce is nice and smooth. Season the sauce with salt and pepper. Add the tagliatelle and mix well with the sauce. Leave on the stove for another 2 minutes, stirring regularly. Tip: I generally replace cream with soy cuisine, as it has almost half the calories.
