Ingredients for 1 servings:

  • 200 g spelt flour (type 630)
  • ½ cube of yeast
  • 80 ml water, lukewarm
  • 1 tsp sugar
  • 1 apple
  • 400 g wholemeal spelt flour
  • 150 g sourdough
  • 2 tsp salt
  • 4 tbsp walnut oil or sesame oil
  • 2 tbsp honey
  • 20 g sunflower seeds
  • 20 g sesame seeds
  • 20 g flaxseed
  • 100 g walnuts, chopped

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour 50 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours

Place the spelt flour type 630 in a bowl. Make a well in the flour. Crumble in the yeast and add about 80 ml of lukewarm water and the sugar. Stir and let rise for about 15 minutes. Peel and core the apples, and finely grate them. Add the apple, wholemeal spelt flour, sourdough, salt, oil, honey, about 250 ml of lukewarm water, sunflower seeds, sesame seeds, linseed, and walnuts to the pre-dough. Knead everything into a smooth dough, cover, and let rise for 45 minutes. Knead the dough again, then transfer it to the greased loaf pan. Cover and let rise for another 40 minutes. Preheat the oven to 220°C top/bottom heat (200°C fan-assisted oven). Cut a small slit in the dough lengthwise and bake for about 45 minutes. The dough will darken considerably during baking; you may want to cover it with aluminum foil towards the end.
