Dabbed Lemon Cake and Berries
The perfect dabbed lemon cake and berries recipe with a picture and simple step-by-step instructions.
- 175 g Soft butter
- 175 g Sugar
- 1 packet Vanilla sugar
- 3 Eggs
- 175 g Flour
- 1 Organic lemon
- 1,5 tsp Baking powder
- 1 Prices Salt
- 2 tbsp Lemon juice
- 100 g Berry
- Cut the softened butter into pieces and place in a bowl. Add sugar and vanilla sugar and stir for a few minutes until frothy. Add one egg at a time to the mixture, always mixing well in between.
- Sift the flour, baking powder and salt into the mixture and stir into a smooth dough, also add the grated zest of the lemon. Now mix in the lemon juice as well. Finally, add the berries to the batter and mix briefly.
- Put the dough in a greased dish. Bake the cake for about 50 minutes at a temperature of 180 ° C.
- 4th TIP: The cake tastes great with currants! Since currants can be quite sour, I prepare the cake with 60 g raspberries and 40 g currants, so the berry mixture is well balanced.
