Wild garlic cream soup

Ingredients for 4 servings:

  • 2 m.-sized onion(s)
  • 2 tbsp butter or margarine
  • 2 ½ tbsp flour
  • 3 tbsp vegetable broth, instant
  • 500 g sweet cream
  • 75 g wild garlic
  • 1 tsp lemon juice
  • 1 pinch(s) of sugar
  • salt and pepper
  • Chervil, for garnishing

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and finely chop the onions, then sauté in the fat until translucent. Add the flour and sauté until golden brown, stirring constantly. Stir in 2 liters of water and the cream, and bring to a boil. Add the instant stock and dissolve it. Simmer over low heat for 10 minutes. Sort the wild garlic, wash thoroughly, and chop coarsely if necessary. Add to the soup and puree with a hand blender. DO NOT BOIL ANYMORE!! Season to taste with salt, freshly ground pepper, lemon juice, and sugar, and garnish with the chervil.
