Ingredients
- 100 g Wild garlic fresh
- 1 tbsp Rapeseed oil
- 3 Eggs
- 1 tbsp Cream
- Salt and pepper
- 1 tbsp Butter
- 2 tbsp Ricotta
- 1 disc South Tyrolean ham
Instructions
- Clean the wild garlic and cut into large pieces. Heat 1 tablespoon of oil in a pan and sauté 50 g of wild garlic in it, season with salt and pepper.
- Finely puree the eggs, cream, 50 gr, wild garlic, salt and pepper with a blender. Heat the butter in a non-stick pan, pour the egg mixture into the pan, fry over a medium heat for about 5 minutes, turn carefully and fry for about 5 minutes.
- Place the wild garlic omelette on a large plate. Place the steamed wild garlic, ricotta and ham on one half of the omelette and pepper. Fold the omelette in the middle. Serve garnished with a few wild garlic leaves.
