Wild garlic sauce for fish

Ingredients for 4 servings:

  • 1 shallot(s)
  • 1 tbsp clarified butter
  • 12 leaves wild garlic, young
  • 250 ml fish stock
  • 1 jar white wine
  • 4 tbsp crème fraîche
  • herbal salt
  • nutmeg
  • Pepper, white

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the shallots. Finely slice the wild garlic leaves. Sauté the shallots in hot clarified butter until translucent and add half of the wild garlic leaves. Add the fish stock and simmer gently. Season to taste. Then add the white wine and crème fraîche and purée everything with a hand blender. Sprinkle the remaining chopped wild garlic leaves over the top.
