Wild Garlic Tzatziki

The perfect wild garlic tzatziki recipe with a picture and simple step-by-step instructions.

  • Cucumber
  • Salt
  • 1 bunch Wild garlic leaves
  • 200 g Sour cream
  • 200 g Natural yoghurt
  • 2 tablespoon Quark
  • 2 tablespoon Vinegar
  • 2 tablespoon Olive oil
  • Pepper
  1. Peel the cucumber, divide with a small spoon remove the seeds and cut into small cubes.
  2. Place in a bowl with the salt and set aside to steep the water.
  3. Wash the wild garlic, spin dry and chop.
  4. Squeeze out the cucumber cubes, add the sour cream, natural yoghurt and quark and mix everything together to a creamy mixture.
  5. Now add the wild garlic, mix well, season with salt, pepper, vinegar and oil.
  6. Let the tzatziki soak in the fridge and then with gyros or whatever you like to eat — bon appetite
