Wild herb salad with balsamic dressing

Ingredients for 4 servings:

  • 1 bunch of wild herbs
  • 1 shallot(s) or onion
  • 1 package of sheep’s cheese (e.g. from Salakis), approx. 200 g
  • 250 g cherry tomatoes
  • e.g. seeds and nuts (sunflower, pumpkin, pine nuts, walnuts, cashew nuts)
  • 1 tbsp olive oil
  • 1 ½ tbsp balsamic vinegar
  • 1 tsp mustard, medium hot
  • 1 tsp salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and spin the lettuce. Then dice the feta cheese. Quarter the tomatoes and finely dice the shallot. Place everything in a salad bowl. Either combine and chop the seeds and nuts mentioned above according to your taste or buy a ready-made seed mix for a salad. For the dressing, simply mix all the ingredients together in a jar. Add it, along with the seeds, to the rest of the salad shortly before serving. Mix everything thoroughly and then serve. This amount is enough for 4 salad bowls.
