Ingredients for 4 servings:
- 1 eggplant(s)
- 6 small tomatoes
- 100 g mozzarella, grated
- 100 g Gouda, grated
- 2 tbsp olive oil
- 1 tbsp salt
- some oregano, dried
- some basil, fresh
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Wash the eggplant and cut into evenly thick slices. Mix olive oil and salt and brush the eggplant slices on both sides. Sprinkle with oregano, if desired. Grill in a grill tray for about 15 minutes. Top with diced or sliced tomatoes and the cheese. Grill briefly again until the cheese has melted. Serve sprinkled with fresh basil.
