Wild salmon fillet with walnut crust

Ingredients for 2 servings:

  • 300 g wild salmon fillet(s)
  • 20 g walnuts
  • 2 sprigs of parsley
  • 25 g low-fat margarine
  • 1 tbsp breadcrumbs
  • 1 tbsp Parmesan, freshly grated
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

WW suitable

Wash the wild salmon fillets, pat dry (or thaw), and season with salt, pepper, and lemon juice. Roughly chop the walnuts and parsley. Knead the nuts with the parsley, breadcrumbs, Parmesan cheese, and margarine, and season with salt and pepper. Place the fish fillets in a baking dish, spread with the nut mix, and press down firmly. Bake in a preheated oven at 160°C (convection oven) for about 25 minutes. Serve with rice.
