Ingredients for 1 servings:

  • 100 g white chocolate
  • 150 g butter
  • 200 g speculatius biscuits
  • 3 eggs
  • 200 ml buttermilk
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp cinnamon
  • 200 g flour
  • 1 pack of pudding powder, vanilla
  • ½ pack of baking powder
  • 2 m.-sized apples, e.g. Boskoop, as desired

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat oven to 160°C and either grease the muffin tin with butter or line it with paper baking cases. First, melt the white chocolate and butter in a saucepan over medium heat. Set aside and let cool slightly. Combine the speculatius biscuits, eggs, and buttermilk. This works best in a stand mixer or with an immersion blender. Add the sugar, vanilla sugar, and cinnamon and mix well. Mix the flour, baking powder, and pudding powder in a bowl and stir in the speculatius biscuit mixture and chocolate mixture with a wooden spoon. The muffins also taste good with a few pieces of apple. Dice the two apples and stir them into the batter at the end. Pour the batter into the muffin tin and bake at 160°C for about 25-35 minutes. Tip: Instead of paper baking cases, you can also use squares of baking paper. To do this, cut the baking paper into small squares. Moisten them all together under the tap and press them together so that the baking paper becomes malleable. Squeeze out any excess water and place the individual squares into the muffin tin.
