Ingredients for 2 servings:

  • 6 leaves of endive lettuce
  • 6 leaves of lettuce, or Lollo Rosso or the same amount of lamb’s lettuce
  • 6 leaves of radicchio
  • some arugula
  • 4 tbsp balsamic vinegar, white
  • Salt and pepper, black
  • 1 pinch(s) of sugar
  • 2 small garlic cloves
  • 1 tsp, heaped Dijon mustard
  • 4 tbsp olive oil, very good

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

A vegetarian starter for lovers

Sort the lettuces and tear into bite-sized pieces. Trim the thin stalks from the arugula. For the vinaigrette, combine the vinegar, salt, pepper, and sugar. Add the mustard and mix. Press in the garlic cloves. Mix vigorously again until the salt and sugar are dissolved. Season the dressing to taste. Add the oil and whisk vigorously until a light emulsion forms. Pour the finished vinaigrette over the washed and thoroughly spin-dried lettuce and mix well.
