Winter spiced red cabbage from Rosinenkind

Ingredients for 10 servings:

  • 1 head of red cabbage, grated
  • 3 apples, finely grated
  • 2 onions, peeled and finely diced
  • 2 tbsp goose fat
  • 1 bay leaf
  • 125 ml vinegar (red wine vinegar)
  • 250 ml vegetable stock
  • 3 carnations
  • 10 grains of allspice
  • 1 tsp nutmeg, grated
  • 2 tbsp jelly (quince jelly)
  • 2 tbsp cranberries
  • 2 tbsp brown sugar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Heat the lard in a sufficiently large pot, add the onions and sauté until translucent. Add the sugar and let it caramelize slightly. Now gradually add the cabbage and sauté. Add the liquids and bring to a boil. Add the spices, cranberries, and jelly and simmer for a good 1-1.5 hours, then season to taste. Sterilize twist-off jars, add the red cabbage, and seal immediately.
