Ingredients for 1 servings:

  • 3 eggs, separated
  • 125 g sugar
  • 4 tbsp water, hot
  • 150 g flour
  • 1 tsp baking powder
  • 1 bottle of Cremefine, for whipping
  • 1 jar spread (fruit spread apple with cinnamon type baked apple)
  • ½ tsp cinnamon
  • some powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Beat the egg whites until stiff. Beat the egg yolks with water, sugar, and cinnamon until creamy and the sugar is dissolved. Sift the flour and baking powder onto the cream and stir in with a wooden spoon. Carefully fold in the egg whites with a whisk. Spread the batter evenly onto a baking sheet lined with baking paper. Bake in a preheated oven at 200 degrees Celsius for about 10 minutes until golden brown. Spread a damp cloth, turn the sponge upside down onto it, immediately remove the paper, cover with a second damp cloth, and let cool. This only takes a few minutes. In the meantime, beat the Cremefine with cinnamon until stiff and fold in the fruit spread. Spread the cream on the cooled cake and roll it up using the cloth. Dust with icing sugar. You can of course also use cream, but then please whip with cream stiffener.
