simple, also works with elderflowers

First, carefully clean the woodruff and then let it wilt or dry for at least four hours; only then will the coumarin truly develop its aroma. Heat the sugar together with the water and citric acid until the sugar has completely dissolved. Then let everything cool. Slice the lemon. Place the woodruff in a container, pour the liquid over it, and cover everything with the lemon slices. Cover and let it steep in a cool place for three days. Then pour the syrup through a fine sieve into a sterile container. If kept cool, the syrup will keep for several months. It goes wonderfully in a punch, on sparkling wine, or as a mixed drink, e.g., Berliner Weisse. 80 kcal per serving.
