Ingredients for 1 servings:
- 600 g flour
- 300 g sugar
- 1 pinch of salt
- 1 bag of vanilla sugar
- 50 g almonds, ground, without skin
- 1 pinch of baking powder
- ¼ tsp cinnamon
- 1 egg yolk
- 300 g butter or margarine
- 6 m.-sized eggs
- 1 bag of vanilla sugar
- 450 g crème fraîche
- 125 g sugar
- 1 packet of vanilla pudding powder
- 2 kg plum(s)
- Fat and flour for the drip pan
Instructions
Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 30 minutes
Halve and pit the plums. Mix together the flour, 300g sugar, a pinch of salt, 1 sachet of vanilla sugar, baking powder, ground almonds, and cinnamon. Add the egg yolk and the fat in small pieces. Knead everything together and form crumbles. Grease and flour the oven tray. Place about 3/4 of the crumbles into the tray and press evenly into a base with your hands. Then bake in a preheated oven (175°C, gas mark 2) for about 15 minutes. Mix the eggs, 1 sachet of vanilla sugar, crème fraîche, 125g sugar, and custard powder. Remove the base from the oven, top with the plums, and pour the glaze over it. Sprinkle with the remaining crumbles and bake at the same temperature for about another 45 minutes. Remove from the oven and let cool.
