Wraps with Avocado Cream & Radishes

- 1 Pc. Fresh avocado
- 2 Pc. Peeled garlic clove
- 200 g Blanched peas
- 1 Handful Mint leaves
- 2 tbsp Extra virgin olive oil
- 2 tbsp Freshly squeezed lemon juice
- 3 tbsp Pumpkin seed fresh
- 1 bunch Radishes fresh
- 200 g Sheep cheese
- 1 Pkg. Wrap
- 100 g Iceberg lettuce fresh
- Salt
- Pepper
- Puree the avocado meat, peas, lemon juice, garlic, mint, salt, pepper and olive oil. Cut the lettuce and radishes into strips. Roast the pumpkin seeds in a pan without oil until they are fragrant. Spread the avocado cream on the tortilla, spread the lettuce, radishes, crumbled sheep cheese and the pumpkin seeds and roll up. At one end, fold over the tortilla a little and then roll it up to make a small pocket. TIP if you don’t want sheep cheese, use cottage cheese. Instead of the tortilla, you can also prepare a pancake batter without sugar ☺ instead with salt and prepare your wraps. If you want something spicier like me, you can also add sambal olek to the wraps.
