Italian Carbonara Sauce

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 onion(s)
  • 2 garlic cloves
  • 100 g bacon
  • 20 g Parmesan, preferably freshly grated
  • 1 tbsp parsley, finely chopped
  • 300 ml cream or, as a low-calorie alternative, Cremefine
  • salt and pepper
  • 1 egg yolk per person
  • more Parmesan as needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely slice the onion and sauté with the chopped garlic. Cut the bacon into thin strips and sauté. Then deglaze everything with the cream and bring to a boil. Add the parsley and Parmesan cheese and season with salt and pepper. Before pouring the carbonara sauce over the spaghetti, add one egg yolk per person and mix well. You can also sprinkle Parmesan cheese over the sauce and spaghetti, if desired.
