Yeast cake with plums and apple

Ingredients for 1 servings:

  • 500 g flour
  • 1 bag of yeast, dry
  • 1 tsp, crushed cinnamon powder (Ceylon cinnamon powder)
  • 1 lemon(s)
  • 250 ml milk
  • 40 g butter
  • 1 apple
  • 5 plums
  • some cinnamon powder (Ceylon cinnamon powder) for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 40 minutes; Total time approx. 3 hours

Gently heat the milk and butter until the butter has melted. Allow the milk to cool to slightly above room temperature. Place the flour in a large bowl, make a well in the center, and sprinkle in the yeast. Pour in the milk and carefully mix with the yeast and a little flour. Lightly cover the edges with flour and cover with a cloth. Let rest in a warm place for 30 minutes. Knead the dough well and let rest for another 60 minutes. The dough should have risen considerably. Season the dough with cinnamon and lemon zest and press into a greased tart pan. Set the dough aside for a short while. Cut the apple into wedges, drizzle with a little lemon juice, and season with a pinch of cinnamon. Pit the plums, cut into wedges, and mix them into the apple slices. Place the fruit on the dough. To do this, insert the wedges into the dough so that only about half is visible. Preheat the oven to 180 degrees Celsius. Bake the cake for about 30 minutes. Let the finished cake cool slightly. This will allow some of the plum juice to release, sweetening the cake even further.
