12 delicious little rolls
Grease a muffin tin and refrigerate. Mix the flour with the salt. Mix the milk with the water and dissolve the yeast in it. Put half the flour and 1 teaspoon of sugar into a bowl and add the dissolved yeast. Knead into a smooth dough and let it rise for 20 minutes. Once the dough has doubled in size, melt the butter and stir in the egg. Fold the mixture into the dough and knead thoroughly. Mix in the remaining flour, sugar, and raisins. Knead on a floured surface for 10 minutes until a smooth dough forms. Form 12 balls and place in the muffin tin. Whisk the egg yolk and brush the dough balls with it. Sprinkle with sugar and cinnamon. Place the tin in a cold oven and bake at 200°C (top/bottom heat) for 20-25 minutes. Remove from the oven, let cool for 3-4 minutes, and then remove from the tin. They taste particularly delicious with jam or honey.
