Ingredients for 7 servings:

  • 500 g flour (type 405 or 550)
  • 20 g yeast
  • 1 pinch(s) of sugar
  • 375 ml water, lukewarm
  • 1 tsp salt
  • Cheese, grated
  • sesame
  • poppy

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 35 minutes

In a bowl, mix 5 tablespoons of flour, crumbled yeast, sugar, and up to 125 ml of water. Leave to rise in a warm place for 30 minutes. Sift over the remaining flour mixed with the salt. Knead everything into a firm dough. Form into a ball and let rise under a cloth for another 30 minutes. Knead the dough again. Form a log with a diameter of 3-4 cm. Cut 3 cm thick slices from it and form balls by pressing the outer edges inwards so that the smooth cut surface forms a flawless top. Place seven balls in a circle on a floured baking sheet. Brush with water and sprinkle with the various ingredients. Let rise for a good 45 minutes. Bake at 220 °C for about 35 minutes. Brush again immediately.
