Yeast wreath with apple and nut filling

Ingredients for 1 servings:

  • 220 g milk
  • 100 g butter
  • 90 g sugar
  • 1 cube of yeast
  • 600 g flour
  • 1 egg(s)
  • ½ tsp salt
  • 200 g hazelnuts
  • 100 g chocolate
  • 440 g apples, pitted, quartered
  • 50 g sugar
  • ½ tsp cinnamon
  • e.g. milk
  • Milk, for brushing

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dough: Place the milk, butter, sugar, and yeast in the mixing bowl and heat for 2 minutes/37°C/speed 2. Add the flour, egg, and salt and knead for 3 minutes/speed 2. Transfer the dough to a bowl and let it rise in a warm place for about 30 minutes. Filling: Place the hazelnuts and chocolate in the mixing bowl and chop for 6 seconds/speed 8. Add the apples, sugar, and cinnamon and chop for 5 seconds/speed 8. If the mixture is too firm, mix in 50g of milk. Roll out the dough thinly into a rectangle (approx. 50x60cm). Spread the filling evenly over it. Fold in the narrower sides a little. Roll up from the long side. Cut the roll in half lengthwise to create two long, open strands. Place both strands on top of each other like a St. Andrew’s cross with the cut side facing up. Braid the open strands towards the end. Place the rolled dough in a wreath shape on a baking sheet lined with parchment paper and brush with milk. Let it rise for another 15 minutes and bake in a preheated oven at 200°C for about 10 minutes. Then reduce the oven temperature to 180°C and bake for another 40 minutes. Makes 25 servings.
