Yogurt cake with berries

Ingredients for 1 servings:

  • 3 eggs
  • 3 tbsp water, cold
  • 150 g sugar
  • ½ tsp lemon zest
  • 150 g flour
  • 1 tsp baking powder
  • 10 sheets of gelatin
  • 250 g mixed berries (frozen or fresh)
  • 2 tbsp lemon juice
  • 500 g natural yogurt
  • 125 g sour cream
  • 250 g sugar
  • 1 cup of cream

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Prepare the sponge cake from the following ingredients: (separate the eggs; beat the egg whites; beat the eggs and sugar until fluffy; add the lemon zest; fold in the flour and baking powder; fold in the egg whites). Bake the sponge cake in a round springform pan for about 15 minutes at 180°C. Filling: Soak the gelatin. Puree the berries, mix with the sugar, lemon juice, yogurt, and sour cream. Stir in the gelatin. Allow the mixture to set slightly. Divide the sponge cake, place a cake ring over it, and spread the mixture on top. Place the lid on the cake. Whip the cream until stiff, then use it to decorate the cake or for other decorations (e.g., small roses, etc.).
