Yogurt – Mandarin – Muffins

Ingredients for 1 servings:

  • 180 g flour
  • 1 ½ tsp baking powder
  • 1 orange(s), untreated, zest
  • 1 small can of tangerine(s), well drained
  • 3 eggs
  • 180 g butter, soft
  • 180 g brown sugar
  • ½ packet of vanilla sugar
  • 125 g natural yogurt (0.1% is also possible)
  • possibly grease for the mold
  • possibly paper cups
  • possibly powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the flour, baking powder, and orange zest. In a second bowl, whisk the eggs, then add the butter, sugar, vanilla sugar, and yogurt and mix until smooth. Then add the dry ingredients to the second bowl and gently fold in until a smooth mixture forms. Pour the batter into a greased muffin tin (or paper baking cups). Fill the holes about 3/4 full and place 2-3 mandarin orange pieces on each one, gently pressing them into the batter. Bake at 180°C on the middle rack of the oven for approx. 20-25 minutes. Dust the cooled muffins with powdered sugar, if desired.
