Zander – Predatory Fish With Tender Meat

The pike-perch is also known under the names Schill and Pike perch. It belongs to the perch family and is a freshwater fish that is also native to us. The zander prefers large rivers and lakes with a hard, sandy bottom and slightly murky water. Zander are predatory fish, which almost exclusively separate themselves from other fish, such as e.g. B. smelt, feed. The fish, like the pike, has a slender and elongated shape. The color of the back is pale green with rows of dark spots, which also continue over the fins and tail. The zander’s mouth has many small fangs arranged in rows in the jaw. Usually, the fish is 40 to 120 cm long and weighs up to 12 kg.

Origin

Originally, the zander comes from the east and north of Europe. In Russia in particular, it plays an important role in the supply of fish. Today the fish is widespread throughout Central Europe. It can also be found in low-salt parts of the Baltic Sea. It can also be found from the Aral Sea across the Black Sea to the upper parts of the Danube and in the Hungarian Balaton. It is also native to some regions in Finland and Sweden. The zander stocks in many areas of the Baltic Sea are heavily fished or overfished. The stock situation is not systematically recorded in European inland waters, but many stocks appear to be overexploited and likely to continue to be overexploited. Zander is also bred in ponds.

Season

Zander contains a lot of valuable protein, no carbohydrates, and very little fat. It provides vitamin B12, niacin, potassium, and plenty of phosphorus. Phosphorus helps maintain normal bones and teeth, and the mineral potassium helps maintain normal blood pressure.
