  • 750 g bratwurst, fresh
  • 50 g clarified butter
  • 1 onion(s)
  • 1 bottle of beer (Kölsch)
  • 1 bay leaf
  • 3 peppercorns
  • 1 tbsp flour
  • Salt
  • Water

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cologne bratwurst pan

Pour a little hot water over the bratwurst in the pan to prevent it from bursting. Allow the water to evaporate from the hot pan, then add the clarified butter and the peeled and sliced ​​onion and brown everything. Add the spices and pour a little beer into the pan, covering the bottom of the pan. Let it simmer until it is completely absorbed and the liquid has browned on the bottom. Pour the remaining Kölsch beer over the sausage and let it simmer for about 15 minutes. Thicken the sauce with flour whisked in water and season with salt. In Cologne, Zizies are best eaten with mashed potatoes and savoy cabbage.
