Ingredients for 4 servings:
- 300 g zucchini, coarsely grated
- 400 g carrot(s), peeled, coarsely grated
- 1 m.-sized onion(s), coarsely grated
- 100 g Emmental cheese, grated
- 2 eggs
- 4 tbsp oat flakes, wholegrain
- 2 tbsp wheat flour
- 1 tsp Madras curry powder
- 2 tsp salt
- Black pepper, freshly ground
- Rapeseed oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
In a bowl, combine the zucchini, carrots, onion, Emmental cheese, eggs, oats, flour, curry powder, salt, and pepper. If the mixture is too watery, stir in a little more flour. Heat the oil in a pan and fry the batter in batches until golden brown on both sides.
