Ingredients for 4 servings:
- 40 g onion(s)
- 250 g tomato(s) (cocktail tomatoes)
- 400 g zucchini
- 250 g mushrooms (champignons, chanterelles, porcini mushrooms)
- Garlic
- 2 tbsp olive oil
- oregano
- sage
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- Salt
- pepper
- lemon juice
Instructions
Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes
Finely chop the onions, halve the cherry tomatoes, halve the zucchini lengthwise and slice them. Cut the mushrooms into small pieces. Season the zucchini and mushrooms with salt, pepper, lemon juice, and garlic. Heat 2 tablespoons of oil in a pan and sauté the zucchini and mushroom mixture until crispy. Finally, add the onions and tomatoes and season. Prepare a marinade from oregano, sage, balsamic vinegar, olive oil, salt, pepper, and lemon juice. Pour over the salad and let it marinate in the refrigerator for 2 hours. Arrange the salad in bowls and serve.
