Ingredients for 4 servings:
- 150 g zucchini, finely chopped
- 100 g peas, frozen
- 1 tbsp thyme leaves
- 600 ml vegetable broth, possibly from instant powder
- 1 tbsp lemon juice, freshly squeezed
- black pepper, freshly ground
- Nutmeg, freshly grated
- ¼ bunch chives, chopped
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Finely puree the zucchini, peas, thyme and vegetable stock with a hand blender, season with lemon juice, pepper and nutmeg, pour into glasses and serve sprinkled with chives.
