Zucchini and sausage casserole with mashed potatoes

Ingredients for 4 servings:

  • 4 servings of mashed potatoes, homemade or ready-made
  • 1 onion(s)
  • 600 g zucchini
  • 2 tbsp butter
  • ½ cup cream, approx. 100 g
  • 100 g cheese, grated
  • 8 Vienna sausages
  • e.g. salt and pepper
  • e.g. parsley
  • Butter for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel and finely dice the onion. Wash and finely dice the zucchini. Heat the butter in a pan and sauté the onions until translucent. Add the zucchini and sauté for a few minutes. Deglaze with the cream and thicken with half of the cheese. Season with salt, pepper, and parsley. Butter a shallow baking dish, pour in the mashed potatoes, and smooth the surface. Thinly slice the sausages, place them on top of the mashed potatoes, and arrange the zucchini on top. Sprinkle with the remaining cheese. Bake in a preheated oven at 180°C (top/bottom heat) for about 15 minutes on the middle rack.
