Ingredients for 4 servings:
- 2 large zucchini
- Salt and pepper, freshly ground
- olive oil
- Garlic granules or garlic, fresh
- ½ lemon(s)
- 300 ml white wine
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes
Wash the zucchini and slice diagonally into large slices using a slicer. Place them side by side and season well with salt and pepper. Rub the salt and pepper evenly (zucchini absorbs water after a short time, so rub it all over). Heat olive oil in a pan. Add the garlic. Fry the zucchini over high heat on both sides until lightly browned. Then transfer to a wide dish. Repeat this process until all the zucchini are fried. Add oil and garlic to the pan before frying. Pour lemon juice and wine into the hot pan (it may splash!) and bring to a boil briefly. Pour the hot broth over the zucchini. Let it sit for a few hours. If the zucchini are not completely covered, occasionally spoon the liquid over the zucchini. It’s delicious on a barbecue or on an appetizer plate. It can also be prepared the day before.
