Ingredients for 4 servings:

  • 400 g zucchini
  • 400 g apples
  • 150 g carrot(s)
  • 50 g hazelnuts, ground
  • 1 package of gelling sugar, 2 : 1

Wash, peel, and coarsely grate the zucchini, apples, and carrots. (You can also vary the amounts, using more of one and less of the other, as long as you get to 1000g.) Mix everything together, add the nuts at the end, and cook with a 2:1 preserving sugar ratio as directed on the package. Pour into clean twist-off jars, tightly close the lids, and turn the jars upside down. Once cooled, store in a cool, dark place.
