Ingredients for 2 servings:
- 1 onion(s), cut into half rings
- 1 large apple, diced
- 1 large tomato(s), diced
- 2 garlic cloves, finely sliced
- 2 tbsp sunflower seeds
- 500 g zucchini, cut into sticks
- 2 tbsp olive oil
- Salt
- Pepper, freshly ground
- 1 bunch parsley, chopped
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Heat 1 tablespoon of olive oil in a pan and sauté the onions until translucent. Add the apple, tomato, and garlic and simmer for about 5 minutes. In a second pan, roast the sunflower seeds until golden brown, remove, and set aside. Then heat the remaining olive oil in it and fry the zucchini over medium heat. Season with salt and pepper. Fry the zucchini sticks until the water starts to run. Then increase the heat and continue to fry, stirring, until the water has completely evaporated. Add the apple and onion mixture to the zucchini and simmer for about 5 minutes. Season to taste and arrange on plates. Sprinkle with parsley and sunflower seeds and serve. Boiled potatoes, rice, or pasta are suitable as a side dish.
