Zucchini Boats Maike’s Style

Ingredients
 

  • 1 Medium zucchini
  • 400 g Ground beef
  • 250 g Sheep milk cheese
  • 4 Cocktail tomatoes
  • 125 g Diced Kat ham
  • 2 Pointed peppers yellow
  • 1 Extra virgin olive oil
  • 1 Spices such as salt, pepper, paprika, rosemary
  • 1 Onion

Instructions
 

  • Line the casserole dish with the diced ham.
  • Halve the zucchini and scoop out with a spoon.
  • Pre-cook the zucchini in the oven at around 200 degrees.
  • Fry the minced meat in olive oil.
  • Dice the onion and pointed pepper and add to the minced meat.
  • Dice the sheep's cheese. Reserve a few cubes for gratinating.
  • When the minced meat is well browned, season and add the sheep's cheese and stir.
  • Fill the two courgette boats with the minced meat mixture and place in the baking dish. If there is any ground beef mixture left, spread it on the sides.
  • Cut the cherry tomatoes into slices and place on the minced meat. Put a cube of sheep's cheese on each slice.
  • Season again and finally bake at 200 degrees for about 15 to 20 minutes.
  • Rice tastes good with it.
  • You can of course replace the sheep's cheese with other cheeses.
